Coppa d’estate is made in various regions of Italy. It is prepared using methods and flavours following ancient traditions, which helped by the climate, give this product different characteristics.
Our Coppa d’estate is prepared with pork neck, seasoned with salt, pepper and a pinch of garlic, which makes this product particularly fragrant when cut.

It is made from a mix of a fatty meat found exclusively in the pig’s cheeks, seasoned with salt, pepper and spices, and chopped meat from shoulder and ham, which gives this sausage the clear pinkish colour from which the name “Salame Rosa” (pink salami) is derived.
