BONDIOLA

A speciality of Venetian tradition, this appetising and tempting Bondiola is a valid alternative to traditional cured meats to be boiled in a pot. It is a mix of pork rinds and meat of Italian origin, white wine, salt and pepper, flavoured with nutmeg and stuffed into natural pig bladder.
The pig bladder is a type of thick casing that requires slow cooking, so that the fat in the mix melts and amalgamates evenly with the lean meat; the result is a delicately flavoured, quality product with excellent taste.

SALAMINA DELICATA

The Salamina, as Ferrara people like to call it, becomes delicate, a unique product, to make all palates, even the most delicate, discover and enjoy the flavours of our land.
Made from a mix of pork meat of Italian origin mixed with Sangiovese wine and rum, flavoured with salt and pepper, and stuffed into natural pig bladder, hand-tied and aged for 60 days on average.

COTECHINO

Made from bacon rind and lean Italian pork flavoured with white wine, salt, pepper and nutmeg, it’s enclosed in a natural bovine casing.
The traditional dish of cotechino and lentils is believed to bring good fortune.

SALAME DA PENTOLA

Ferrara‘s answer to cotechino, salame da pentola is very similar in appearance to cotechino but uses different ingredients: lean minced Italian pork flavoured with white wine, salt, pepper and garlic, enclosed in a natural bovine casing.
In Ferrara, salame da pentola is affectionately known as salamino buono, the adjective referring to the goodness – or leanness – of the meat from which it’s made.

ZAMPONE

Made following an ancient recipe belonging to the Modena grandparents and founders of the company, our zampone has minced pork meat and rinds of Italian origin mixed with white wine, salt and pepper, flavoured with nutmeg and stuffed into the skin of the pig’s paw, hand-tied.
Served accompanied by classic mashed potatoes, it is one of the best and most appetising dishes ever.
